Zerde

Zerde Me Karamel is a traditional dessert of the city of Elbasan that used to prepare mainly during the winter, but also for various family holidays.
The origin of this dessert goes back to the Middle East, Turkey, where this dessert cooks with saffron, which gives it the flavor and the color. This dessert uses to cook in Turkey for holidays, weddings, birthdays, etc., and the name zerde comes from the word zard, which in Persian means yellow. In our tradition, this dessert cooks with caramel, and the rice gets flavor and color from the caramel, cloves, and cinnamon. The caramelization of the sugar and cooking of the rice can impact our cooking results in this recipe.

 

Ingredients

  • 3-tbsp of sugar
  • 100 g of rice
  • 4-5 cloves
  • cinnamon powder

Directions

  1. In a non-stick pan, we will add the sugar to caramelize by stirring it with a wooden spoon to take a beautiful caramel color.
  2. We remove it from the heat to cool slightly, and we add warm water and rinsed rice. We put the rice first in the water to soften and cook faster.
    The rice must cook until it releases the starch and thickens. We will use 3-4 glasses of water, but you can see the right quantity by yourself.
  3. We will also add the cloves after we add the water to simmer together with the rice and to flavor our dessert.
  4. Finally, we will throw it in the cups to cool by sprinkling it with cinnamon powder on the surface. Let it cool completely and then serve as desired.
