We like to share today a Stuffed Tomatoes with Minced Beef recipe, approved from our kids, and easy to prepare.

Tomatoes can cook in various ways, and this recipe is a combination of Stuffed Tomatoes with Minced Beef and Vegetables. Simple to cook and very tasty, this is a dish that you can consume for dinner or lunch, and a fast meal for our sunny summer days.

Tomato is one of my preferred vegetables, riched in water, is a hydration source for our organism. We can eat and consume it in various ways, fresh or cooked, combing in healthy and colorful dishes, salads, soups, sauce, and drink.

During the summer, tomatoes don’t miss our tables, and this recipe is a healthy way to consume this veggie. Tomato fruit is 95% water, 4% carbohydrates, and less than 1% of fat. In 100% of raw tomato, we get 18 calories and only 17% of our daily value of vitamin C, so combining with other ingredients, this recipe becomes healthier in nutritional values.

Stuffed Tomatoes With Minced Beef-Family Cooking Recipes

 

The ingredients for One Serving

  • 2- large firm tomatoes
  • 150 g/5 oz minced beef
  • 1-2 tbsp unsalted butter
  • 2-3 tbsp olive oil
  • 1-medium onion, or 1/2 medium onion and 2- spring onions
  • 1/2 medium carrot
  • 1/4 red peppers
  • 1/2 medium zucchini
  • 1 tbsp fresh garlic
  • salt
  • pepper
  • fresh parsley, mint, dill, thyme, or oregano

The ingredients for 4-6  Serving

  • 6- large firm tomatoes
  • 450 g/16 oz minced beef
  • 1- tomato pulp
  • 4 tbsp unsalted butter
  • 5 tbsp olive oil
  • 1-medium onion
  • 1- medium carrot
  • 1/2 red peppers
  • 1/2 medium zucchini
  • 1 tbsp fresh garlic
  • salt
  • pepper
  • fresh parsley, mint, dill, thyme, or oregano

Directions

  1. Preheat the oven to 180°C/350°F.
  2. Clean and rinse the tomatoes, cut off the top, and scoop out the flesh. The pulp of one tomato will use in our stuffed tomato recipe, and the rest I recommend to take apart for another family cooking recipe. In the kitchen, nothing must throw away.

  4. Clean and chop the onion, carrot, zucchini, red peppers, finely.
  5. In a pan, heat the oil and add the onion to fry firstly. When the onion starts golden brown, add carrot, zucchini, red peppers, and mix to stir-fry together in medium heat.Stuffed Tomatoes With Minced Beef-Family Cooking Recipes
  6. After 3-5 minutes, add the fresh garlic, salt, pepper, and let season the veggies mixture for 3-5 minutes.

  8. Add the tomato’s pulp and let it cook all the mixture for 3-5 minutes.
  9. Garnish with our fresh herbs as you prefer. I used parsley, mint, and dill. With spoon stuff the tomatoes with the beef and veggies mixture.
  10. Bake the stuffed tomatoes in the preheated oven for 15-20 minutes.
  11. After baking, transfer the stuffed tomatoes on a serving plate. Serve it hot.

Conservation

You can conserve the stuffed tomatoes in a refrigerator container for one day after they cooled completely.

Tips

This mixture recipe can use with other tips of vegetables, like red, green, yellow bell peppers, or zucchini. It is better to avoid the use of pepper for young babies.
