Today, we like to share with you Yellow Bean Soup Recipe and meat, or known, like Yellow or Green Bean Dish in the Albanian culinary tradition. My mother and my grandmother label this recipe with this name. This traditional dish is a recipe that we remember from our childhood. Our mother used to cook it often during the summer, and we like to share it like we continue cooking it in our family.

Yellow or Green Beans are one of the vegetables or ingredients that widely used in different recipes during all the years and all the seasons, but fresher and full of flavor, this vegetable we cook from the Spring up to the Autumn. The yellow beans cooking recipes and techniques are various, like soup, salad, side dish, oven dish, etc.

The Green or a yellow bean is the fresh pod where grows and matures the dry beans, which knows for high nutritional values for any age group, from the baby up to an older. The Yellow and Green beans are veggies with high proteins, complex carbohydrates, iron, and folate. They are known for the high soluble fiber values. Fast to digest and rich in nutrients, they recommended for everyone in every stage. In a cooked yellow beans cup, we can benefit from nine to thirteen grams of fibers.

  • Firstly, we clean very well our yellow beans, using bicarbonate and raising in running water, and after that, we clean them from tails and outer threads. We continue with the other vegetables clean, rinse, and making ready to chop.
  • Chop the onion, carrot, tomatoes finely, and the yellow beans in little pieces about 2-3 cm/5-7 inches.
  • Cut the beef in pieces as you prefer. When all the ingredients are ready, we’ll continue to cook our recipe.

  1. Take a pot with thick and non-stick bottom, add the oil and heat in medium heat. Add the finely chopped onion and carrot and start frying together. Stir- fry and mix for 3-5 minutes the onion and carrot until golden brown.
  2. Lower the heat, add the beef to the mixture and continue to mix for the other 5-10 minutes until meat golden brown.
  3. Add the chopped tomatoes and stir-fry for the other 3-5 minutes.
  4. And right away, add the yellow beans.
  5. Add salt, pepper, and in low heat, continue the stirring for another 3-5 minutes.
  6. Add warm water until the mixture to cover, (7-8) close the pot’s lid and continue the cooking for the other 20-25 minutes. The heat must be lower to medium, and your soup is ready when the beef is cook (you can check with a fork). 

In the end, garnish with finely chopped fresh parsley to season your yellow bean soup.

I prefer the final cooking result with not too much broth. This dish can serve as a dinner or lunch meal because it is a nutritional cook, easily soluble, and with not too many calories.

Conservation

This cook can keep for 24 hours in the refrigerator in one hermetically container. We recommended that during the summer, it is better than daily cooks to serve and consume on the same day. Eat fresh and healthy food, to avoid any soluble issues, food poisoning, or infective disease. 

Tips 

  • On a daily, cook for your family as you need, not more. Eat healthily cooking every day fresh meals, from organics ingredients (as much as you can) for your family. 
  • This recipe can cook without beef or other meat, following the same directions. In this case, it will be a light, vegan, and nutritional soup, tasting the veggies’ nutritional value at a low cost. 
  • At the place of the yellow bean, you can use the green bean, if you like. And you can add other veggies like potato and squash, to prepare a healthy vegetable soup for your children. The kids like the potatoes, so this can be a way to urge them to eat the other vegetable if you cook together with the potato.  
  • For a healthily and light cook, you can fry the onion and vegetables with 2-3 tbsp water, cooking in their liquids, and add the olive oil at the end of the cooking time or when you serve the soup on your plate. In this way, you will benefit from all the nutritional values of Olive Oil. 
  • You can choose to season your soup with the finely chopped dill, thyme, or oregano, in place of parsley.
  • For a faster cook and halved the cooking time, you can use a pressure pot, to finish the cook after adding the water to the mixture. In this case, the water quantity needed to be moderate, following your pressure pot manual.
  • If you don’t like beef, you can use poultry, in this recipe.
