Quiche With Eggplant

Quiche with Eggplant and Sausages is a delicious savory tart. Quiche is good cooking to combine our favorite ingredients. We can combine different products that may have left us in the fridge, too, as well as pizza, pies, savory cakes.

In this recipe, we combine eggplants with fresh beef sausages for a delicious and much-liked taste.
We can always make the dough in advance, and we have it ready in the fridge. I have previously shared with you in Quiche with spinach. You can prepare the quiche dough with olive oil instantly and in a few minutes.

I prefer to make a soft dough with olive oil, which results in crunchy after baking time. You can choose to make the dough with butter or buy it ready.

Like any other quiche, this one can serve for dinner, as an appetizer at a festive table, banquets, or to accompany your favorite meat or vegetable recipes.

It is also a delicious picnic food, or to take with you to work or school.

  • 1 Brise or puff pastry
  • 1 big eggplant
  • 2 fresh sausages
  • 1 red onion
  • salt, pepper, parsley, olive oil
  • 200 ml of cooking cream
  • 2 eggs
  • 50 g Guda, Chedar, or Mozzarella cheese
  • 3-4 tbsp of ground cheese

For the Brise dough

  • 175 g of flour
  • 75 ml of olive oil
  • 60 ml of cold water
  • a little salt

Directions

Preparation of the Dough

  1. First, we prepare the dough for the quiche base. In a bowl, mix the flour with the salt and add the olive oil. The flour will granulate. We add the water gradually, and in a few minutes, it will be a soft dough.
    We can roll it directly into a layer with less flour. If you want to use the ready-made dough, you can skip this stage.
  2. Place the layer in a tart baking pan. Bake it in advance by placing on top of it a parchment paper covered with rice, beans, or lentils, to create weight. We will bake it in a preheated oven at 170 degrees for about 20 minutes.

Filling Preparation and Baking

  2. We will mix it until it softens a little and add the fresh skinless sausages, pressing and crushing it with the help of two forks.Quiche With Eggplant-Family Cooking Recipes

  4. Add salt, pepper, and continue to cook it for a few minutes until the eggplant changes color and soft. Finally, add finely chopped fresh parsley.

  7. Add the egg and cream mixture and cover it with 2-3 tablespoons of grated cheese.

  1. HI Alketa. This looks like a really yummy dish.  I have never tried before to do quiche by myself in home, but looking on your post and pictures it doesn’t seems to complicated. Definitely something new and different from pizza and burgers which my kids would eat every day if I let them. And every way to convince them to eat more vegetables is good way. Looking forward to test this meal in practice !
