Ingredients

For the cornflour layer

  • 300 g cornflour
  • 600 ml of water
  • salt
  • 2 tbsp olive oil

For the filling

  • 500 g raw spinach cleaned
  • 2- spring onions
  • 100 g feta cheese
  • 1-egg
  • salt, pepper
  • fresh or dried mint, parsley
  • 3-4 tbsp olive oil 3-4 lugȅ
  • 3-4 tbsp cornflour to cover the top

Directions

  1. Rinse the spinach and cut it.
  2. Cut the onions finely, and in a large saucepan, add a little oil to heat in medium heat.
  3. Add the cut onions and spinach to the pan and let cook until tender. Add the herbs and let cool.

  5. In a deep pan, add the water to boil, and when it boils, add salt and 2-tbsp olive oil. Add the cornflour to the boiled water, and mix immediately until creating a soft and homogeneous dough.
  6. Grease an oven baking dish and open the cornflour dough at the baking tin, creating a pie layer, thick one cm, covering all the baking dish borders, high at least three cm.
  7. Preheat the oven at 200°C/390°F.
  8. Add the spinach mixture over the pie layer, open in all the baking surface and cover it with the other cornflour. Sprinkle the top cornflour layer with a little water. Add a little oil and bake at the preheated oven for about 40 minutes.
