Healthy Blueberry Cake Recipe

Blueberry is one of the berry fruits, rich in Vitamin C, which we use in many dessert recipes and not only.

This Healthy Blueberry Cake Recipe that we will share with you today turns out delicious and crunchy, a delicacy for your breakfasts or snack time. We constantly shared with you blueberry recipes with wild or cultivated ones. We encourage you to try its taste in muffins, plumcakes, or cheesecakes.

In today’s recipe, I cooked it with all-purpose flour, cornstarch, and coconut flour. The cake is butter-free for a lighter taste.

If you do not have enough blueberries as required in the recipe, you can replace a part of them with dried fruits, being sure that blueberries predominated. I had not enough blueberries, and I replaced some with raisins.

It can cook simply. We make the cake dough in a few minutes by beating the ingredients with an electric hand beater and directly in the oven for baking it.

After baking, we can choose to decorate it as we like, simply sprinkling it with powdered sugar, preparing a chocolate glaze as I did, or even a glaze with powdered sugar. In any case, blueberries combine best.

  • 3 eggs
  • 150 g of sugar
  • 80 ml homemade white natural yogurt or Greek yogurt
  • 85 ml buttermilk (80 ml of milk +5 ml lemon juice)
  • 100 ml vegetal oil (sunflower or corn oil)
  • 150 g all-purpose flour
  • 75 g corn starch or potato starch
  • 75 g coconut flour
  • 200 g fresh blueberries or 150 g blueberries +50 g raisins
  • ground lemon zest (one lemon)
  • 1 tsp vanilla extract
  • 1 package of baking powder

For the top

  • 150-200 g dark or milk chocolate
  • dry fruits, nuts, almonds, blueberries, and mint.

Directions

Preparatory Phase

  1. As a start, we will separate the egg yolks from the whites in two deep glass bowls. Eggs should be at room temperature.
  2. Wash the blueberry well, dry it well, dust it with flour and leave it separately to add at the end. We save some grains for decoration. If you are going to replace a piece of blueberry with raisins or dried prunes, put these in water too.
  3. Prepare a 24 cm cake pan with a hole in the middle, grease it with butter and sprinkle with flour, and place it in the refrigerator until the dough is ready.
  4. Mix the milk with the lemon juice well. Add the yogurt and set it aside for a few minutes until we beat the eggs.
  5. Beat the egg whites separately, and when they are becoming meringue, we will add 1/3 of the sugar in three parts. Beat it until it is a creamy meringue, and keep it aside.

Making the Cake Dough

  1. In another deep glass bowl, beat the egg yolks with the remaining sugar again with a whisk for a few minutes until they become a white foam.
  2. Gradually add the buttermilk and yogurt mixture to the yarn, beating only with the electric beater.
  3. Add the same oil, minced lemon peel, and vanilla flavor.
  4. Separately we sifted the flour, starch, coconut flour, and baking powder and mixed them all.

  7. When the dough is ready, we will add the blueberries by mixing them with a kitchen spatula from the bottom up to spread well inside the cake dough.

  8. Once we mixed well, we transfer the cake dough to the cake pan and bake it in a preheated oven at 180 degrees for 35-40 minutes. Do the toothpick test.

  9. Remove from the oven, let cool slightly and transfer to a plate.
