The wild blueberry has a smaller grain than the cultivated varieties, and it has a high value of vitamins C and K, low glycemic values and it tastes not so sweet like the cultivated varieties. For its low glycemic values, it considers one of the best fruit to consume from diabetic persons or everyone that suffers from urinary tract infections.

Ingredients for 10-12 muffins

  • 2 eggs
  • 150g of sugar
  • 100 ml of vegetal oil ( corn, sunflower, etc.)
  • 150 ml of milk
  • 250 g all-purpose flour
  • 200 g wild blueberries
  • 1 package of baking powder
  • Vanilla extract
  • Powder sugar for decorating

Directions

  1. Preheat the oven at 180 degrees. Prepare all the ingredients before starting to cook blueberry muffins.
  2. We need a muffins pan to bake them. If you have muffins baking papers, then just put one of each in any muffins shape. This is the easiest methods to put out the muffins from the muffins baking pan. This also is a nice way to serve them, and we can use muffins baking paper according to our event, like a birthday party, Halloween party, etc. When we don’t have muffin baking papers, we can use a sort of spry baking fat for greasing the baking pan, which is also good to take out the muffins from their stencil shapes after baking them. The last way is to grease the baking pan with butter or oil and to flourish it with flour. When the muffing pan is ready, we continue to prepare the muffins dough.
  3. In a deep bowl, we add eggs and sugar, and with an electric egg beater, we mix them until it creates a creamy foam. If you will use a liquid vanilla, you need to add it at this moment to the bowl. If we use vanilla extracts or sugar vanilla then we add it before adding the flour.
  4. Add the oil little by little to the eggs liquid and continue mixing it until the oil is completely absorbed by the liquid mixture.
  5. Add the milk and continue mixing with an electric beater until it creates a homogeneous liquid.
  6. We mix the sifted flour with the baking powder and add little by little to the liquid mixture mixing until it will be a soft and creamy dough.
  7. We add the cleaned wild blueberries to the muffin dough and mix it carefully with a spoon to open them in all the dough. A part of them we keep apart to add on the top of the blueberry muffins. The wild blueberry can stay perfectly to the dough and they don’t fall down at the bottom of the muffins stencils during the baking time. If you will use blueberries cultivated varieties, then we flourish them with a little flour before adding to the muffin dough.
  8. We will fill the muffins pan with a spoon in 3/4 of each of them and we add some of the blueberries on the top of each muffin.   9. We bake them in the preheated oven for 20-25 minutes. Do not open the oven during the first 20 minutes. In the end, we always do the tooth stick check. It will be dry if the muffins are baked properly.
