Vegetable Meatballs Recipe

This Vegetable Meatballs Recipe is a quick recipe to make. Also, it is a tasty recipe to serve at lunches with friends or for banquets and parties.

As well, I cook this recipe in the oven, making them even healthier for any age. But, if you want, you can also cook by frying. I prefer to bake in the oven.

Ingredients

  • two carrots
  • 2 zucchinis or one slice of winter yellow squash
  • 2 leeks
  • 50-100 g white cheese
  • 100 g cottage cheese
  • 2 eggs
  • salt, pepper, fresh parsley
  • bread crumbs

Directions

  1. We will clean the vegetables by washing them well in running water. Then, clean them from the skin, and with a grater, we will grind them all, carrots, squash, and leeks.
  2. In a bowl, we will add grated vegetables. Also, add eggs, cheese, cottage cheese, herbs, spices, 2-3 tablespoons of olive oil, and mix them all.
  3. Then, mix them well, give them a round shape with our hands as desired, and pass them on crumbled bread.
  4. We will place them in a pan lined with baking paper. Bake the meatballs in a preheated oven at 200 degrees for 20-25 minutes.
  5. Finally, take them out of the oven and place them on a serving plate.
  6. In the end, we consume them warm together with the salad or sauce you like.
