Chickpea Meatballs Recipe

The chickpea is a legume food, and as the beans or lentic, it is one of the healthy foods that we need to consume during fall and winter. It is rich in proteins, dietary fiber, iron, phosphor, vitamin B6, magnesium, zinc, etc. and it is a good source of our daily values in proteins. Today, we want to share our Chickpea Meatballs Recipe, a healthy vegetarian recipe, which can serve as an appetizer, with other homemade sauces and salads, or a main vegetarian dish. I cooked them baked in the oven, but if you prefer more fried than I suggest to fry using enough vegetal oil.

Ingredients

• 400-450 g boiled chickpeas
• 2- eggs (one for breading)
• 2-3 tbsp ground cheese
• 60 g diced soft cheese
• A slice of bread softened in milk or water
• 3-tbsp of olive oil
• salt
• pepper
• fresh rosemary
• 1-garlic clove
• Bread crumbs for breading

Directions

  3. In a deep bowl, we add the blended or grounded chickpeas, ground cheese, crushed slice of bread, egg, olive oil, salt, pepper, finely chopped garlic clove, and mix it all to make a dough.
  4. In a small bowl, add the egg and beat it with a fork. In another bowl or plate, put the diced soft cheese, and on another dish, add bread crumbs.   5. We will prepare the meatballs, taking a little from the meatball mixture, adding a piece of cheese in the middle, giving the round shape with our palms, and after that, doing the breading process, passing the meatball in egg, bread crumbs, and transfer in the baking pan.Chickpea Meatballs Recipe-Family Cooking Recipes
  6. We bake them in the preheated oven for about 20-25 minutes until golden.
