This Simple Lemon Mascarpone Cake is a delicious recipe to to cook in the kitchen. Like many of you, I often have to wake up early, and preparing breakfast for my family is one of my daily routines. So, cooking recipes such as a cake, muffins, cookies, etc., that we can cook one day or a few hours earlier make our breakfasts more delicious, but also give us a hand to gain more time in the morning rush.

The cake I am sharing today is light in taste, soft, and best combined with morning coffee, a glass of juice, and milk, and can enjoy by everyone in the family.

You need a few ingredients for this recipe. I recommend organic lemon for a dominant lemon flavor. Also, we can add additional lemon essence.

Ingredients

  • 3 eggs
  • 250 g Mascarpone
  • 130 g of sugar
  • 60 ml vegetal oil (corn or sunflower)
  • Juice and zest of one lemon
  • 250 g of all- purpose flour
  • 12 g baking powder
  • Vanilla (facultative)
  • Icing sugar for top

Directions

  1. First, weigh and prepare all the ingredients. Turn the oven on at 180 degrees. Then, prepare a baking cake ring by smearing it with less butter and dusting it with flour.
  2. To begin with, we will separate the yolks from the whites. The eggs must be for a few minutes at room temperature. So, beat the egg whites with an electric beater separately until they become meringue.
  3. Next, in another deep bowl, we will beat the sugar and the mascarpone cream until it becomes a homogeneous mass. Add the egg yolks one by one until it becomes a cream.
  4. Also, add oil, lemon zest, and juice.
  5. In the end, add the sifted flour mixed with the baking powder.
  6. Finally, add the beaten egg whites, mixing with a kitchen spatula from the bottom-up to obtain a homogeneous dough and keep the volume.
  7. Pour the dough into the previously prepared cake form. We level it carefully and put it in a preheated oven at 180 degrees to bake for 30-35 minutes. We do the toothpick test.
  8. After taking it out of the oven, put it on a plate, let it cool a bit, and dust it with powdered sugar.
