Ingredients
Crepes Dough
- 400 ml of milk
- 2 eggs
- a pinch of salt
- 150 g of flour
- a little butter
Crepe filling
- 1 green pepper
- 1 red pepper
- 1 zucchini
- 1 eggplant
- 200 g of Mortadella
- 200 g of Mocarrella
- Olive Oil, salt, pepper
- Bechamel sauce
- 500 ml of milk
- 50 g of butter
- 50 g of flour
- a little salt
- 100 g ground Parmesan cheese
Directions
- First, we will prepare the crepes as we have shown before and leave them aside.
- Then, we will rinse and cut the vegetables into cubes.
- Next, in a pan with olive oil, we will stir the vegetables until they soften. Also, dice and add mortadella into the pan.
- Add salt and pepper and cook together for a few minutes. Moreover, vegetables should be cooked but crunchy.
- Meanwhile, we will prepare the bechamel sauce.
- Also, cut sliced mozzarella cheese.
- Then, we start to fill crepes. Add in the middle of the crepe a spoonful of cooked vegetables, a spoonful of bechamel, and a slice of Mocarrrella cheese.
- We close it like an envelope shape and place it in a pan coated with butter. Then, we continue like this until the end. Finally, top with the remaining bechamel and minced parmesan cheese..
- Bake in the preheated oven at 200 degrees for 20-25 minutes.
