This Red Bean Soup Recipe is a dish of Albanian cuisine, mainly in the South of the country where red bean cultivates every year.

Ingredients
- 300 g of dry red beans
- 1 onion
- 1/2 carrot
- 1/2 Cerely stick
- 2-3 dry tomatoes
- salt, pepper
- olive oil
- oregano
Directions
- First, we will put the well-washed beans in cold water and leave them for a few hours. After that, rinse the red beans and put them to boil with cold water.
- So, we will make the first stew for 5-7 minutes.
- Next, pour the water of this stew by rinsing the beans with warm water.
- We will put the beans back in the pot to continue cooking. So, fill it with twice the amount of beans with hot water. Do not use cold water and salt, which slow down the cooking process.
- Also, we use the pressure cooker to ease cooking and save time. Next, boil red beans for 30-40 minutes. The bean kernels should turn out soft.
- Next, in a separate pan, we will sauté the finely chopped onion, the celery cut into small cubes, and the carrot cut into cubes. Drizzle with olive oil.
- Once onion tender, add the chopped and thinly dried tomatoes. Also, you can replace them with tomato sauce or peppers.
- Once the onion goldens, add it to the boiled beans. Also, add salt and pepper, and cook them all together again for another 5-10 minutes under the pressure cooker. In the end, you can decide by yourself how thin or thick you want the soup. Red beans kernels will turn out creamy. You can add water if needed.
- At the end of cooking, add dried oregano.
- Finally, serve warm with raw olive oil on top, accompanied by olive salad or various pickles.
