Ingredients
- 2 large zucchinis, or 3 medium ones
- 1 carrot (optional)
- 1/2 onion
- 2 eggs
- 3 tbsp full of flour
- 3 tbsp bread crumbs
- 3-4 tbsp full of ground cheese
- 1-2 tbsp of olive oil
- fresh parsley or mint
- salt, pepper
Directions
- We will wash the zucchini well and grate them with a grater. Sprinkle with salt and let it rest in a colander for 20-30 minutes to remove excess water.
- Meanwhile, we will grate the onion and carrot and place them in a bowl.
- We will also add eggs, minced cheese, flour, bread crumbs, spices, oil, and a little salt. Keep in mind that cheese also contains salt.
- Also, add the grated zucchinis, which we have squeezed with our hands to remove the remaining water.
- Mix them well to make a homogeneous dough.
- We prepare a baking tray with parchment paper. Helping by two spoons, we shape the dough, which we lightly press with the back part of the spoon.
- Place the tray in the preheated oven at 180 degrees for 20 minutes.
- Finish baking bypassing the baking for another five minutes on the oven grill programming. Thus they will resonate even more crunching from the outside.
- Remove from the oven and serve hot or cold as desired.
