This Healthy Vegetable And Bulgur Soup is a tasty recipe full of nutritional value for the winter season. Above all, full of nutritional value for children as well.

Ingredients

  • one leek
  • one carrot
  • 1-red bell pepper
  • one zucchini or a slice of butternut squash
  • 1-2 broccoli tails (the inside part)
  • 2-3 small tomatoes or one large well ripen tomato
  • 100 g of bulgur
  • 2 l of beef stock
  • salt, pepper, dry oregano

Directions

  1. First, we will clean the vegetables and finely chop them into cubes. So chop the leek finely. Then, peel and dice the carrot finely, too.
  2. Next, clean the pepper from the seeds and fibers and cut it into cubes, too. So, we dice the zucchini. We will clean the broccoli stalks from the outside and cut the hearts into small cubes.
  3. Also, cut the squash or zucchini into cubes.
  4. Once ready, in a non-stick pan, add two tablespoons of olive oil and add the leeks, carrots, and peppers.
  5. Then, cook them for 2-3 minutes until they wither and add the zucchini and the broccoli hearts.
  6. Next, after 2-3 minutes, add the tomato, a little salt, pepper, and cook all for a few more minutes.
  7. Then, add the meat broth, salt, and pepper if necessary.
  8. Finally, rinse the bulgur well in warm water and add it to the soup.
  9. Boil them all together at medium temperature with the lid on for 30-40 minutes.
  10. In the end, season the soup with dried oregano, olive oil, salt, and pepper.
  11. Finally, serve the soup warm.
