The summer is plenty of veggies and the eggplant is one of them. The eggplant recipes can not miss in our table, during the summer. Today, I want to share the Eggplant Moussaka Recipe, which is the main dish with a perfect combination of the minced beef and veggies. Like many other oven recipes, we can prepare the Moussaka for all the family or in one serving dish. I cooked today this recipe for one serving, because I prepare some different recipes with eggplant, using similar ingredients, and one serving baking dish for each recipe, to complete in this way, the taste of each family members if they prefer to eat eggplant in different cooking recipes.
In below, I will explain the Moussaka Recipe.
Ingredients – One Serving
- 1 big eggplant, or 2 small ones
- 100g minced beef
- 1 -onion
- 1/2 small carrot
- 1/2 Zucchini
- 1-2 ripe tomatoes
- Salt, pepper, olive oil, parsley
- 50 g parmesan cheese
For the bechamel sauce
- 250 ml of milk
- 1 tbsp flour
- 1 tbsp butter
- Salt, muscat nut
Directions
- Rinse the eggplants, and cut them in slices, not too thin. Salty and let sit in salty water for a while.
- Preheat the oven at 200 degrees.
- Grease a baking dish, dry the eggplants with a kitchen paper, marinate with a little salt and olive oil and put in the baking dish. Put them in the oven to bake lightly, for about 15-20 minutes.
- During this time, chop the onion, dice the carrot and zucchini finely.
- In a saucepan, add a little oil, and the chopped onion, and stir-fry until it tender.
- Add the minced beef, and cover the pan with a lid, stir-fry until the beef change colour. Add the diced carrot and zucchini, mix together until them tender.
- Add the ground tomatoes, salt, pepper, and chopped parsley.
- Let all cook, covered with a lid for 15-20 minutes, until the onion is cooked properly.
- During this time, in another non-stick pan, add the butter and flour and stir fry for 3-4 minutes in low heat, until flour golden. Add the warm milk and mix in low heat, until it creates a homogeneous sauce. Add salt, pepper, muscat nut, and let the bechamel sauce cool covered with a pellicle. - Preheat the oven at 200 degrees.
- Take a one serving baking dish. Add a little bechamel sauce and a little from the minced and onion mixture.
- Add the first layer of sliced eggplants, continuing with minced beef mixture ( 2-3 tbsp in each layer), 2-3 tbsp of bechamel sauce and a little parmesan cheese.
- Continue like this, until to the top of the baking dish, finishing with bechamel sauce and parmesan cheese.
- Put the baking dish to the preheated oven, to bake for 20-30 minutes, until its golden brown.
- Serve it warm.

Note: We can prepare and bake more slice eggplants for cooking various recipes with them like vegan lasagna, rolled eggplants, etc.
You can prepare the eggplants fried light from both sides in a pan. I give you the baking way, like a healthier and light cooking way. In this way, the eggplant didn’t absorb too much oil.
