Nettle pie is a traditional recipe that is widely and often cooked, especially during the spring, but we can find fresh nettle in the autumn, too, and prepare yummy recipes with it.
We like nettles in our family and cook several traditional recipes with this green leaf ingredient. Previously, we shared our recipe for nettle and corn flour. Also, we use nettles as an ingredient in our green leaves spring pie.
This recipe cooks with few ingredients. So, to taste the natural flavor of the nettles, we will only add milk and olive oil. And those few ingredients add nutritional value to the cooking and make the nettles taste delicious.
Ingredients
For the dough
- 400-500 g all-purpose flour
- 200-250 ml water
- 1 tsp of salt
- 2 tbsp of olive oil
For the filling
- 500 g fresh nettles
- 1 glass of milk
- 3-4 tbsp of olive oil
- 100 ml olive or vegetal oil to spread on layers
- 1 tbsp corn flour
- Salt
Directions
- First, we will prepare the dough. So, form a hole in the middle of the sifted flour, and add the oil, salt, and water by mixing with a fork until we have the dough done.
- We will knead the dough for a few minutes until a soft dough is ready, cover it with cellophane or a napkin, and let it rest for 30 minutes.
- Meanwhile, we will prepare the filling.
Burek Filling
- So, clean the nettles well by leaving them immersed for a few minutes in water with vinegar or salt. Then, we rinse them several times and drain them from the water.
- Also, cut them finely and place them in a pot with a lid. Add a little salt to preserve the color, and let them cook with their water.
- When the nettles are almost cooked and have absorbed their liquid, add the milk and corn flour and mix with a wooden spoon until it makes a creamy mass. To test the nettle’s cook, press them with a wooden spoon. Once the filling is ready, take it off the heat and add the olive oil, which gives a lot of flavor to the pie filling.
- Then, leave the filling aside and start to open the dough layers.
Rolling The Dough & Baking
- First, knead the dough again for 2-3 minutes. Then, divide it into three parts. And each of them into 3-5 equal balls.
- Then, roll each piece of dough in a hand-sized circle and grease the layer between them with oil.
- We will roll each of the groups of layers in a layer to cover the bottom and sides of the pan where we will bake the pie.
- Spray the pan with oil, lay out the phyllo layer, and spray again with vegetable or olive oil.
- In this way, we continue with the other two layers. Add the nettle filling in the middle of the pie.
- We will also add the last layer, sprinkle with oil, cut the pie into pieces, and bake in a preheated oven at 200 degrees for 35-40 minutes until it gets a beautiful reddish color.
- Take the pie out of the oven and let it rest a little before serving. Serve the pie warm and cut into pieces. So, accompany it with a seasonal salad and season soup for a complete and nutritional meal.
