Reginette or Mafaldine is the name of this fresh pasta due to its characteristic shape. They are a type of flat paste about 1 cm thick and lined on the sides in zigzag or the form of a ribbon.

These types of pasta belong to the Neapolitan tradition. Also, it knows as Mafaldine or the little queen in honor of Princess Mafalda of Savoy.

Reginette is a pasta with a dough base of flour and eggs, like fettuccine, tagliatelle, or linguine.

Also, it tastes delicious with delicate sauces. Today, we like to share and serve in a spinach and chicken creamy sauce.

Ingredients

For the Pasta Dough

  • 3 fresh eggs
  • 300 g of flour
  • salt

For the spinach sauce

  • 1 chicken breast
  • Olive oil
  • 200 ml of fresh cream
  • 300 g of fresh spinach
  • Minced Grana cheese
  • Salt, pepper

Directions

Pasta Dough

First, we will prepare the dough for Reginette’s fresh pasta.

  1. First, put the flour on a work surface and make a hole in the middle. Add the fresh eggs and a little salt, and start mixing it by gradually adding the flour.
  2. This way, we will make the dough and knead it by hand until it becomes a smooth and elastic pasta dough.
  3. Once ready, cover the dough with a clean napkin and let it rest for 30 minutes.

How To Prepare The Creamy Spinach Chicken Sauce

  1. Meanwhile, clean and rinse the spinach well. Finely chop it and leave it ready to cook aside. Also, cut the chicken breast into small pieces.
  2. Next, take a large and deep pan, and add olive oil and diced chicken breast.
  3. Let it cook for a few minutes until it gets a golden color. Then, add spinach, salt, and pepper and cover the pan with a lid.
  4. At this step, lower the heat and let them cook together for a few minutes. You don’t need much because the spinach doesn’t take long to cook. During cooking, we will add half a glass of water if necessary.
  5. In the end, add the fresh cream and turn it off. The sauce is ready.

How To Shape And Cook Reginette Pasta

  1. We will prepare Reginette by rolling out the dough with the pasta machine. Then, cut the pasta into its ribbon shape. If you don’t have a pasta machine for fresh pasta at home, you can roll it by hand and cut it as we do with tagliatelle, but in a zigzag shape. Or you can buy fresh Reginette pasta at the supermarket.
  2. Meanwhile, we have put the water for cooking the pasta to boil. When the water boils, we will add salt and cook our fresh pasta for a few minutes. Drain and add to the ready saucepan.
  3. Also, you can add some pasta boiling water and mix well so that the sauce has its creaminess.
  4. Add grated grana cheese on top and serve it immediately.
