Chestnut Cookies Recipe

This Chestnut Cookies Recipe is tasty for breakfast, to accompany tea or coffee. Also, these cookies can serve for the holidays by decorating them with chocolate. We cook it with chestnuts and nuts.

Today I am bringing them in the basic version, without using additional decorations or colors, enjoying only the taste of chestnuts, which combine best with nuts.

Also, if we do not have ready chestnut flour, we can use the chestnut pulp. For this, we need to boil the chestnuts with the whole skin without cutting them. We will clean them well and grate them in a fine kitchen shredder, obtaining flour from them.

Ingredients

  • 200 g of chestnuts flour, or boiled chestnuts pulp
  • 2 eggs
  • 80-100 g finely minced nuts
  • 100 g of room temperature butter
  • 100 g of brown sugar
  • 300 g of flour
  • 1 tsp of baking powder
  • 1 tbsp of rum flavor or other brandy

  1. First, we will prepare the chestnuts to take the pulp. So, we boiled and peeled well. Then, grind them finely in a shredder and set them aside.
  2. Next, prepare the nut flour by finely mincing them like flour in a kitchen grater. We will mix grated nuts with the chestnut flour and the 00 flour. Also, add the baking powder.
  3. In a bowl, whisk the sugar with the butter until creamy with a hand whisk or with a whisk.
  4. Next, add the eggs and mix well until you have a homogeneous mass. Also, add liqueur or rum aroma.
  5. Then, add the flour mixture and prepare a soft dough. We wrap it in a kitchen bag and put it in the fridge to rest for 30 minutes.

How To Make And Bake Chestnut Cookies

  1. Once the time passes, we open the dough with a kitchen roller into a noodle 0.5 cm thick, helped by the baking paper so that it does not stick to us.

  2. Next, we cut it with the cookie molds we like. If you prefer the shape of a chestnut, cut it into round shapes. Then, on one side of the circle, make an extension like a bird’s beak with your hands, pressing lightly on the other side. I chose to bake it simply in the shape of a flower.

  4. Remove from the oven, let cool slightly and transfer to a cookie-cutter. The biscuits are soft on the inside and crunchy.
  5. And, if you want to decorate it with chocolate, melt 200 g of chocolate in the water bath or microwave and pass the biscuits partially or all in the melted chocolate.
  6. Then, let the chocolate harden again, and they are ready to serve. And, at the level of sugar that I give here, our cookies do not turn out too sweet. So, they will be delicious with chocolate.
