Byrek Me Qumesht Dhe Veze recipe is a traditional Albanian food that most cooks in the center parts of Albania.
This is a simple recipe, very tasty to prepare with only a few ingredients that we always have in our kitchen. Briefly, I can say that the only difficult part of this is the rolling and baking of the phyllo dough layers. Also, the milk and eggs combining with the other products of milk make this recipe very delicious.

To summarise, what is different is that we roll every layer one by one and are a little thicker than usual. In this way, the phyllo dough layers will bake well, not burn, and don’t break into small pieces during the baking process.

- 500 g all-purpose flour
- 250 ml of water

How we cook the phyllo dough
- First, in a deep bowl, we mix all the ingredients to prepare a soft phyllo dough. Next, sit the dough for 20-30 minutes covered with a wet kitchen towel. In this way, it is easier to roll it.

- Also, for the best result and taste, we must bake the phyllo dough layers in a wood oven.
- As well, we can bake them in our kitchen using our oven and a flat baking pan. We preheat the oven first at 180 degrees, we bake each for about 2 minutes, until light golden being careful to not burn them.
- Other, we can also bake them on an electric grill.
Also, considering that baking the phyllo dough is not convenient and simple for everyone, we can use ready-baked phyllo dough layers. You can bye them ready in any bakery or supermarket.
Ingredients
- 1 package of baked phyllo dough layers
- 1 l of organic milk
- 4-5 fresh eggs
- 100 g unsalted butter+50 ml of corn oil
- Unsalted cottage cheese or fresh and unsalted white cheese
- 1 tsp of salt

Directions
To cook a delicious burek, we must use qualitative ingredients. So, we recommend using high-fat organic milk. In other terms, if you can find fresh organic cow milk, you can boil it first and let it cool.
- First, in a small pan, we add the butter to melt and let it apart to use later.
- Next, in a deep and large bowl, we add eggs and beat them with a hand beater. Add the cold milk. Miks it well, add the oil, salt and mix it again.
- Then, preheat the oven to 200 degrees.
- Grease a non-stick baking dish. Then, we take the baked layers one by one, put them first in the milk and eggs mixture breaking them into pieces with our hands. After that, we put them in the baking pan to lay in a uniform way.
- Also, add melted butter and cottage cheese in every 2-3 layers. If you don’t want to add cottage cheese, you can prepare only with milk and eggs. It will be the same tasty.
- In few words, we continue like this until to finish all the ingredients. If it will remain a little milk, we add it to the top of the burek. We sprinkle the top of it with melted butter.
- Finally, put it in the preheated oven to bake for 25-30 minutes.
- In the end, put it out from the oven, let it cool and cut it into pieces. Serve it warm.
