Byreku me Fasule is one of the traditional Albanian recipes, cooked by our grannies and mother in centuries since the bean was one of the foods during fall and winter. To prepare this recipe, we can use a part of our bean soup if we have overcooked, or cook the beans specifically for the pie. This recipe is tasty, and we recommend to prepare it with baked phyllo dough layers, which you can easily prepare at your home or buy ready in the supermarket.

Ingredients
For the Phyllo Dough
- 500 g all-purpose flour
- 1-egg (facultative)
- 200 ml of water ( For 500 g of flour, we need 250 ml of water, but if you use the egg must subtract the weight of the egg from the amount of water).
- Salt
For the burek filling
- 200 g dry beans
- 1-onion
- 1-carrot (facultative)
- 1-red bell pepper (facultative)
Note. You can cook the bean as you like. I cook it by adding onion, carrot, red pepper, cooking altogether, and blend them later, but not beans, only the veggies. We let beans as they are. I season the bean with salt, olive oil, and pepper. It is a vegetarian recipe, but if you prefer to cook it diversely, you can add ham or bacon in the burek filling… - 100-150 ml olive oil or other vegetal oil for the layers
Directions
- We sift the flour, and we will knead the dough by adding salt, egg, water. We will work the dough until it turns out soft and not sticky. We can let it rest for 15-20 minutes.
- We divide the dough into small balls, a total of 12-15 pieces, depending on how thin you want the layers, and open each piece into a hand-shaped layer.
We sprinkle the layers with flour or starch to not stick with each other and start to roll each of them and bake it in the preheated oven using one of our flat oven pans. I also put a baking sheet in the baking tan before baking the layers. We do not bake them too much so that they do not crumble and are a little soft so that they can fold when we lay the pie. To make the burek laying process easy for us, and to lay the pie and arrange the sides more beautifully, do not bake the bottom and top of the layers but leave them wet. - When we have all ingredients ready, we grease a burek baking pan and start to lay our layers one by one, adding oil between them, and in every 2-3 layers, we add cooked beans. We continue like this until to finish all, we will close the pie with the wet noodles, after we have folded the sides, and put it to bake in the oven preheated to 200 degrees for 25-30 minutes until it turns reddish.
- We will take the pie out of the oven and cover it to keep it soft when we cut it.
We cut it into pieces and serve it warm, accompanied by a seasonal salad or soup. It is a much tasty vegetarian dish.
