Ingredients
- 400 g of rice
- 1 onion
- 200 butternut squash
- 3 fresh sausages
- Some mushrooms (facultative)
- salt, pepper
- 100 g of Asiago cheese
- 2 tbsp of minced Parmesan cheese
- Other cheese as you wish, like kaçkavall
- a little butter
- 1.5 l vegetable broth
Directions
- First, we will grind the onion thinly and sauté it in a non-stick pan with olive oil.
- As the onion softens, we add the peeled and diced squash finely. We also add the cleaned and sliced mushrooms if you want. It’s up to you. Also, you can cook it without them.
- Continue cooking, stirring for a few minutes until slightly softened, and add the sausage, which we removed from the wrapper and chopped.
- So, mix it as soon as the sausage changes its color. Then, add the rice.
- Continue to cook in the pot for a few minutes and add 2/3 of the hot liquid. Let it simmer until it becomes al dente.
- Finally, add the yellow cheese in the cube and a little butter. Arrange with salt and pepper.
- Then, take a Pyrex casserole and add half to the mixture.
- Also, cut the Asiago cheese into thin slices and place it in a layer. In addition, you can use any other type of cheese, which can melt, or pizza cheese.
- Next, cover with another layer of rice mixture, adjust the layer and pour over the remaining liquid.
- Add the parmesan cheese. Then, transfer it to the preheated oven at 200 degrees and bake it for 25 minutes.
