This Best Chicken Fricassee Recipe is a tasty first course to enjoy in any season for a family dinner or lunch.

The recipe is part of the tradition of Albanian cuisine and is very tasty. It is delicious, and we can prepare and cook it quickly.
Fricassee cook in many parts of the world, mostly with chicken, beef, or rabbit. I like to share, today, a variant of it cooked with chicken breast. It cooks quickly and tasty.

Ingredients
- 1 small onion
- 1 chicken breast
- 1/2 glass of white wine
- 1 tbsp of flour
- 250 ml of milk
- 1 tbsp of butter
- salt, pepper, olive oil
- fresh mint
- Lemon juice
Directions
- We will grind the onion finely and sauté it with olive oil until it softens.
- Continue to cook, adding the chicken fillet cut into small cubes. Add salt.
- We will sauté the chicken pieces together with the onion for a few minutes until they get a golden color.
- Continue cooking by quenching the meat and onion with white wine and letting the alcohol evaporate.
- After that, add water and let it simmer for 20 minutes.
- In another pot, we will melt the butter and a spoonful of flour and stir it. We proceed the same as we do for the bechamel sauce.
- Add the milk and cook it on low heat, stirring until you get the sauce. Add a little salt.
- We will add this sauce to the liquid obtained from boiling the chicken breast. The sauce will give the soup the right creaminess.
- Let it boil for a few minutes. It will result in a creamy mass with chicken pieces in it.
- Enjoy the soup with black pepper, instantly ground, and fresh mint.
- Serve the soup warm, with a little olive oil on top and lemon juice.
