Winter Minestrone Recipe is a tasty soup that we have to cook every week during the winter season. I am sharing one of the ways you can combine these seasonal vegetables for a very healthy soup. Furthermore, you can add, remove, or replace one or more from the below vegetables by experimenting with new flavors.

Ingredients
- 1- leek
- one onion or two spring onions
- 1-carrot
- one Cerely stick
- one slice of butternut squash
- 1-2 potatoes
- ½ cauliflower
- 100 g of peas
- 1-2 tomato sauce (pure)
- salt, pepper, olive oil
- water or chicken broth
- spice and herbs as you like
Directions
- First, we rinse the vegetables carefully, and then we clean them and chop them finely. So, finely chop the onion. We cut the celery into cubes.
- We will clean the carrot and cut it into small cubes.
- Peel a squash, grate it and cut it into cubes. Cut the cauliflower or divide it into small pieces according to the flower.
- In a saucepan, add olive oil, leeks, onions, carrots, and chopped celery, and cook for a few minutes until softened.
- Next, add the tomato puree and cook for 1-2 minutes. Then, add the squash, potatoes, cauliflower, and finally the peas and cook for another 1-2 minutes. Add salt, pepper, and cover with water or vegetable juice.
- Then, boil them on low heat for 35-40 minutes with the lid closed.
- In the end, we enjoy it with olive oil, pepper, and spices as desired. If you want, you can also add lemon juice when serving.
