Potato Focaccia Recipe is a recipe of Italian cuisine, which tastes great for a family dinner or weekend. Focaccia is similar to pizza dough, but unlike pizzas, the dough has to rise twice before baking.
This focaccia flatbread tastes delicious. There is various way to cook it. We can choose to cook focaccia with just a little rosemary and gross salt on the top. In this way, with potatoes topping, it turns out tasty, and everyone likes it.
Focaccia is a type of bread that we can serve even at room temperature. You can also use it for your picnics or on weekends outdoors.

Ingredients
For the dough
- 300 g of Manitoba flour, or Pizza flour
- 200 g of all-purpose flour
- 150 ml lukewarm water
- 150 ml lukewarm milk
- 45 ml olive oil
- 1 tsp of salt
- 1 tsp of sugar
- 1 ½ tsp of dry yeast (7 g)
For the topping
- 400-450 g potatoes
- gross salt
- Rosemary
- 3-4 tbsp of olive oil
- some olives
Directions
- First, we will prepare the Focaccia dough. In a bowl, we will mix the flour with salt and sugar. In another bowl, add milk and lukewarm water and digest the yeast in it.
- Add the liquid mixture to the flour and knead the dough. Finally, add the oil piece by piece while working and kneading the dough by hand.
- Once we have a soft dough, we will cover it and let the dough rise for 2-3 hours until it doubles in volume.
- When the dough rises, we will take a baking pan (I used the standard oven pan). Grease it without enough olive oil, and open the focaccia dough by hand.
- Cover the pan again and let the dough rise again for at least 30 minutes.
- Meanwhile, peel the potatoes and cut them into thin circular slices no thicker than 2 mm. Leave the potatoes in a bowl of water so that they do not oxidize.
- We will flavor the olive oil with the rosemary branch by heating it a little at medium temperature and leave it aside for a few minutes to get the taste of rosemary.
- When the dough rises again, drain the potatoes well and marinate them with the flavored oil for a few minutes.
- In the focaccia dough, we will form small holes with our fingers and place the potatoes one by one. We will add coarse grain salt, rosemary, some olives if desired, and the flavored olive oil on top.
- We will bake it in the preheated oven at 200 degrees for 20-25 minutes.
- Take it out of the oven, let it cool a bit, cut it into pieces, and serve as desired.
