Byreku me Presh is another traditional Albanian dish, which we widely cook during cold days when the weather starts to cool in the autumn, winter, and early spring seasons. In this period, we find the freshest and tastiest leeks. Leek Albanian burek is a delicious vegetarian recipe, a combination of leek with cottage cheese, eggs, and milk for a first course at a family lunch.
Ingredients
For the Phyllo dough
- 500 g all-purpose flour
- 250 ml of water

For the filling and rolling
- 2-3 leeks
- 2-eggs
- 100 g of cottage cheese
- 250 ml of milk

- 100-150 ml of vegetal oil

Directions
- First, we clean the leeks from the upper leaves, wash them well in running water and chop them finely with a kitchen knife. In a deep pot or pan with a non-stick lid, add a little olive oil and let the leeks cook at low temperature, covered with a lid until the volume drops and tender. We will add a little salt and let them cook well, adding half the amount of milk. Cook the leeks with the lid on until completely softened.
- We will make the dough as we have explained in previous recipes. The result is a soft dough, which we can leave and a few minutes covered with a kitchen napkin to rest a bit.
- Meanwhile, in a bowl, beat the eggs, add the cottage cheese, cooked leeks, salt, olive oil, and a little milk and mix well to form a creamy mass.
- We take the dough and divide it into two parts. Divide each piece into ten small balls and open each of them into layers with a diameter like a hand. We will grease the layers between them with a little oil. You can choose to roll four phyllo layers out of five or two phyllo layers out of ten. The phyllo layers will stand out during baking, and the pie turns out very tasty.
- We preheat the oven to 200 degrees Celcius.
- We roll the phyllo dough open the layers one by one. Add the phyllo layer to the greased baking pan. If you open it too large, you can also cut it in half and place two ones in your baking casserole, sprinkling them with oil between them. Toss the prepared filling in the middle and the other layer on top.
- Sprinkle the pie with oil and milk and bake in the preheated oven for 30 minutes until it takes on a reddish color.
- Let it cool covered with a kitchen napkin, cut it into pieces, and serve it warm.
