Corn flour cooks and recipes, combining with green leaves veggies like spinach or other green wild green herbs are part of traditional Albanian cooking. Some of these recipes are Lakror, Pispili, or salty cakes. This Polenta and Spinach Recipe is a polenta salty cake recipe combining with green leaves and dairy products. It is much tasty and easy to prepare.
Ingredients
- 250 g polenta flour
- 500 ml of milk or water
- Salt
- 250 g spinach
- 100 g feta cheese
- 1-egg
- Olive oil, fresh mint
Directions
- Clean and rinse the spinach very well and chopped it with a kitchen knife.
- In a saucepan, add a little oil, add spinach, a little salt, and cook it for about 2-3 minutes until it tender. You can replace the spinach with other green leaves like nettle.
- In a casserole, add the milk or water and put it to boil, adding a little salt and 1 tbsp olive oil.
- Add the polenta flour and mix it with a wooden spoon until too thick and cook properly.
- Remove from the heat and let it cool.
- During this time, preheat the oven to 200 degrees.
- At the cooled polenta, add spinach and the crushed cheese, and mix all. Add the egg, other olive oil, and the fresh chopped mint.
- Grease a baking Pyrex dish and add all the polenta mixture in it to bake in the preheated oven for about 25-30 minutes.
- Let the Polenta salty cake to cool. Cut it into pieces and serve it warm.
