Zucchini And Shrimp Pasta

This Zucchini And Shrimp Pasta recipe is a delicious Paccheri Pasta one for a tasty summer first course. We cook it with zucchini and small shrimps.
Paccheri is a kind of tube, cylindrical, and wide pasta, which in this recipe combine best.

Also, small shrimps may take a little longer to clean, but I assure you they give the dish a lot of seafood flavor. Keep in mind that you can use your favorite shrimps as long as they are fresh.

Ingredients

  • 400 g Paccheri pasta
  • 300 g of shrimps
  • 2 zucchini
  • 3 well ripen tomatoes or tomato puree
  • salt, pepper
  • olive oil
  • garlic clove
  • fresh parsley

Directions

  1. We will clean the shrimp from their shells, heads, and intestinal fibers. We will help with a toothpick as they are small. Also, cut the zucchinis into small cubes.
  2. Next, in a pan, we will add olive oil and minced garlic. For two minutes, let the oil heat up and get the aroma.
  3. Continue cooking, adding the diced zucchinis, and cook them until slightly softened.
  4. Next step, add the cleaned shrimp and cook them together for a few minutes until you see that they have dried their juice. There we will add the tomato puree or sauce.
  5. If you use fresh tomatoes, it is better to cook them separately from the shrimp pasta sauce. Because if you cook it together with the shrimp, they will get strengthened by overcooking. If this is the case, you can remove the shrimp from the pan, add the peeled tomatoes and seeds and cook for a few minutes until it turns into a sauce.
  6. To continue, add the shrimp again and let them cook for a few minutes to taste.
  7. Enjoy the pasta sauce with salt, black pepper, and fresh parsley.
  8. Meanwhile, we will boil the pasta in boiling and salty water and a little olive oil. Once you put the pasta in the water, you need to mix it. In this way, it does not stick. Cook it according to packaging instructions.
