Lasagna is one of the most popular pasta for everyone. It is a delicious first plate that can cook in various recipes using both meat and vegetables. Today we will share a White Vegetable Lasagna Recipe. It is a perfect combination of different seasonal vegetables, but you can cook it in the same way in the vegetables you like the most. I have also added chicken bacon to this recipe, but you may not use it for a vegetarian dish.
Ingredients
- 200 g of ready lasagna layers
- 600 g Bechamel sauce
- 1-small broccoli
- 1-butternut squash slice (200-300g)
- 1-zucchini
- 1-carrot
- 2-3 spring onions (white part)
- 1-small onion
- 1-red bell pepper
- 1-eggplant
- 200 g of peas
- 1-cerely stick
- fresh parsley
- salt, pepper, olive oil
- 250 -300 g mozzarella cheese
- 100-150 g ground cheese Parmesan or Grana
For Lasagna dough
- 200 g all-purpose flour
- 2 -fresh eggs
For Bechamel Sauce
- 2 tbsp of butter
- 2 tbsp of flour
- 600 ml of milk
- salt, pepper, nutmeg

Directions
- We clean and rinse all vegetables and dice them.
- So we clean the onion and cut it into small cubes. We also finely chop the green onion. In a saucepan with a lid, add two tablespoons of oil and a little water. Add the chopped onion, stir-fry it for a few minutes, and start to add all the other vegetables one by one. Add the diced broccoli flowers.
Add the peeled red pepper and cut into cubes; We peel the carrot and dice it into cubes. Dice the yellow squash and zucchini squash, and the eggplant and add them to the pan as well. We will add diced celery and peas. We will add salt and let them cook covered in their juice. We will add a little more water, add finely chopped fresh parsley, and boil them for a few more minutes.

- Preheat the oven to 200 degrees Celcius.
- In a lasagna baking pan, we will add bechamel, place the first layer of lasagna noodles, add a little from the prepared mixture with vegetables, pieces of bacon, and pieces of mozzarella and bechamel. You can also add some grated cheese if you want.
So we continue to the end and finish our lasagna with a layer of vegetables, bechamel, and grated cheese. - Put it to bake in the preheated oven for 30 minutes. If you are going to use lasagna layers that do not need to cook first, we put an aluminum foil on the pan, cut it in some places with a fork, and so the lasagna will come out properly cooked and soft. At the last 5 minutes, we remove the aluminum paper and let it take on a beautiful golden color from above.
- Remove from the oven, let it rest for a few minutes, and then cut it into pieces and serve warm.
