Stuffed Grape Leaves Recipe

This Stuffed Grape Leaves Recipe is a special dish of the tradition of Albanian cuisine with a unique taste, which we call Japrak.
There are various and similar recipes to cook Japrak. We cook Japrak with chard leaves, cabbage leaves, and grape leaves, which have a delicious taste.

In our tradition, this recipe cooks without meat. So, a delicious vegetarian recipe, full of the flavor of the ingredients and fresh herbs.

It is a typical Spring season recipe when even the grape leaves are fresh. We can also preserve grape leaves in the freezer to prepare this recipe throughout the year.

We can serve this recipe as the second vegetarian course in a meal accompanied by a soup or salad. But it can also be served as an appetizer, picnic food, or to take with you to work as Japraks can also be eaten cold.

Ingredients

  • 45-50 Grape leaves
  • 3-4 green onions
  • A bunch of various green leaves: Dock, Spinach, Poppy
  • Fresh herbs: parsley, dill, mint
  • salt, pepper
  • 1 coffee cup of rice (100 g)

Directions

  1. We will carefully wash all the greens and cut them finely with a knife.
  2. In a large, deep frying pan, add olive oil and chopped onions, and sauté for a few minutes.

  4. Finally, we will add the washed rice, a glass of water and let it simmer.

  8. Place a spoonful of the prepared filling on the inner part of each grape leaf. Shape and roll grape leaves like a cylinder by folding the sides. The smooth part of the leaf will stay on the outside.
  9. When we stuffed all the grape leaves, we will continue cooking them.

  11. Once we finished all, we will place a plate on top so that they do not move. Add another glass of water. We will cook them on low heat for 10 minutes. The leaves are young and will soften quickly.

  1. I absolutely loved the topic it’s right up my alley because I prepare all the foods in the house and this Japraks, sounds delicious, are you going to be doing any other recipes in the near future sire.

    while I was abroad in the navy I acquired a taste for some foreign foods, Iceland there was their traditional Christmas dinner was sheep’s head and they had fish jerky and lamb hot dogs which were called pilsners, but Mediterranian foods wow GOOD stuff I’m really looking forward to trying these Japraks.
