Stuffed Chicken With Rice

It is easy and tasty to cook on weekend family meals or for festive days.

Ingredients

  • 1 chicken about 1.5 kg
  • 80 g chicken liver
  • 1- small onion
  • 1-carrot
  • 1-2 tbsp butter
  • 3-4 tbsp olive oil
  • 120 g parboiled rice
  • ½ glass of white wine
  • 300 ml chicken, or vegetal stock
  • salt
  • pepper
  • thyme or oregano (fresh or dry)
  • 1 kg potatoes as a side dish
  • For marinating potatoes (salt, pepper, rosemary, olive oil)

Directions

  1. We will clean and rinse the chicken well, dry it, and let apart.
  2. In a saucepan, we will add butter and olive oil, finely chopped onion, and stir fry it for a few minutes covered with a lid until it tender. We add the chicken liver that we rinsed well and cut it into small pieces. We stir fry until to change the color.
  3. Add the rice and stir fry it for some minutes until it is golden, and we will add the white wine.
  4. We high the heat to evaporate the wine, and we add the hot stock that must be boiling for not interrupting the rise cooked. We add salt, pepper, and oregano, or thyme and let it cook until to absorb all the stock.

  6. We will stuff the chicken with the cooked rice. On both sides of the chicken belly, we open with a knife two small cracks and close the chicken belly by crossing its legs.
  7. We transfer it in a baking pan, and we salt and season it well by outside, adding salt, pepper, thyme, and grease it with a little butter and sprinkle it with olive oil. 
  8. We cover it with a lid or aluminum paper and transfer it in the preheated oven to bake it covered for about 30 minutes. After that, we take the cover off and let it bake for the other 30-45 minutes. The cooking time depends on the chicken size. 
  9. During this time, we peel cleaned potatoes, cut them into pieces (not too small), and marinate them with salt, pepper, olive oil, and rosemary.Stuffed Chicken With Rice-Family Cooking Recipes
  10. Passing the first 30 minutes, we will add the cut potatoes around the stuffed chicken to bake together. The potatoes will be soft inside and crispy outside. You can choose to bake potatoes in another baking pan if you like so.  Stuffed Chicken With Rice-Family Cooking Recipes
