This Simple Blueberry Cake Recipe is a delicious and simple one to cook for this weekend. If you prefer to cut down on butter and consume lighter cakes, it is one of the blueberry cake recipes to try. The cake comes out soft, flavored, and with sweetness balanced by Blueberry.
We can serve it for breakfast, to enjoy with a cup of tea or coffee. You can also consume it as a sweet snack for children and adults.
I invite you to cook our Wild Blueberry Muffins, or No-Bake Blueberry Cheesecake, and to explore our Blog for more delicious sweet or salty recipes.
Ingredients
- 4- eggs
- 200 g of sugar
- 100 ml of milk
- 100 ml of corn or sunflower oil
- Lemon zest
- 400 g of all-purpose flour
- 1 package of baking power
- 100 g of fresh or frozen wild blueberries
- a little salt
- icing sugar
Directions
- We will beat the eggs with the sugar until they become foam and change color. We will use an electric beater for it.
- Continue beating the eggs and add the oil, tossing it like a thread. You can also use melted butter if you like it more.
- Once we have mixed the oil well, we will add the milk, the grated organic lemon zest, and the sifted flour. Add all by mixing the dough gradually. Finally, we will add the baking powder.
- When we see that the dough is homogeneous, we will add the blueberries and mix the cake dough to spread well.
- We will throw the prepared mass in a plum cake form coated with butter and sprinkled with flour. The cake will be baked in a preheated oven at 180 degrees for 50 minutes, but you will do the toothpick test. It should come out dry.
- Take it out of the oven and let it cool a bit. We will transfer it to a serving plate and sprinkle it with powdered sugar. Your kids’ breakfast and snack time will be tasty and sweet.
- Accompany it with coffee, juices, or fresh fruit.
Bon Appetit!
