Ingredients
- 350 g of rice for risotto
- 200 g of shrimps
- 200 g of raw spinach
- 1 small onion
- olive oil
- salt, pepper
- 2 l broth ( onion, carrot, spinach, shrimp heads, salt, and water)
- butter and Parmesan cheese
Directions
- To begin with, we will clean the shrimp from the shells and from the intestinal fibers they have on their backs.
- After that, continue washing and cleaning the spinach.
- Next, we prepare the broth for risotto. So, in a deep pot with water, we boil a few shrimp heads along with spinach leaves, onion, carrot, and a little salt for 20 minutes.
- Then, start the risotto cooking by finely chopping the onion and sautéing it for a few minutes with olive oil. We will use a deep pot or pan.
- Since we have used large shrimp, we cut some shrimp into small pieces, others we keep whole to use for decorating the dish.
- So, we will add the shrimp to the onion and mix it until golden. Add salt and ground black pepper at the moment.
- Also, finely chop most of the spinach and save a handful of leaves for blending at the end. In this way, we will have not only a tasty risotto but also a beautiful green color.
- Once the spinach has lost its volume, add the rice, and mix it.
- After a few minutes, when the rice grains reach the necessary heat, add hot juice and mix it well.
- So, we will continue adding the juice gradually until the cooking of the rice is towards the end.
- Meanwhile, we blend the spinach set aside.
- In the last two minutes, add the blended spinach, and once our risotto is ready, add a little butter and a spoonful of minced parmesan cheese.
- Remove it from the heat and mix. Add fresh parsley and serve it immediately.
