This Shrimp Scampi Linguini Recipe is another delicious seafood first plate that we want to share with you. We have shared many shrimp recipes with you, but as you may know, each sea product has its unique taste, and we can prepare every time very tasty and unique plates. This is a summer first plate for lunch or dinner in the family.
Ingredients 5-6 Servings
- 500 g linguini pasta
- 10 -12 shrimps scampi
- 3-4 big ripe tomatoes
- 2 garlic cloves
- Salt, pepper, Olive oil
- Fresh parsley and basil leaves
- Chilly pepper if you prefer it
Directions
- In a deep pasta casserole, add water and put it to boil for the pasta.
- Clean scampi from their shells and tails and with a kitchen knife cut horizontally in their back to remove the sand vein.
- In a pan, add a little oil, a garlic clove, the scampi, and stir-fry for 3-4 minutes in medium heat.
- In another deep saucepan, add olive oil, garlic clove, and the ground or diced tomatoes, and let them cook in low heat for about 15 minutes until it creates a pasta sauce. Add salt, pepper, and some basil leaves. We can use this sauce for the pasta, just like it is with spaghetti pasta shape, for a light meal pasta and tomatoes sauce.
- Add the scampi to the tomatoes sauce and cook together for other 3-4 minutes until to season each-other.
- During the time that we prepare our sauce, we cook the pasta “al dente” in the salty water. Add the pasta to the sauce and mix together for 1-2 minutes adding a little water from pasta cooking. Garnish with herbs, pepper, olive oil, and serve it immediately. Serve the linguini in a pasta dish for a family meal.
