Rosnica or Thërrime like we call this traditional dish in Permet is part of our traditional culinary much preferred by everyone. Years ago, my grandmother used to cook this recipe for our guests and family members, and it always was one of the most preferred dishes. I used to stay next to her every time she cooked this recipe, following every direction carefully. I still remember her recipe and try to cook it for my family, just like she did. My grandmother cooked this recipe with organic baby chicken, which she used to grow by herself every year, and I guarantee that the taste of this dish was unique. This recipe cook with only a few ingredients that we all have in our kitchen, but our Albanian grandmothers have always known how to prepare delicious dishes using only a few ingredients. If you can buy an organic chicken in the farms near to you, then we suggest trying this recipe and cooking it. In other conditions, you can always cook this recipe with a normal chicken grown in open and natural country farms.
I’m going to show you exactly how my grandmother used to prepare it.
Ingredients for 4-6 persona
- One organic baby chicken or a chicken
- 200g all-purpose flour
- 1-egg
- Salt
- Salted butter
- Olive oil
- 3-4 garlic cloves
- 1-Lemon juice

Directions
- Clean and wash the chicken, and cut it into pieces, and dry the chicken with a kitchen towel.
- In a deep pan, add butter, olive oil, and the chicken, and stir-fry in low heat until golden brown.
- In a glass bowl, add the flour, salt, and the egg, and mix all together working with your hands in a circle mode until you create little grains of this mixture, which we call Rosnica.
- At the same pan where we fried the chicken, we remove the chicken apart and add Rosnica to fry in low heat, until golden brown.
- Add hot water and the chicken to the pan, and let all boil in low heat for 15-20 minutes.
- In the end, add the crushed garlic cloves and lemon juice.
- Melt the butter in another pan.
- Serve Rosnica warm, and garnish the serving plate with melted butter.

Note:
The chicken cooking time depends on how big the chicken it is. For faster cook, you can boil the chicken first separately.
