This Roasted Lamb Leg Recipe serving with Semolina And Herbs is a tasty one, and we can cook it in every season.
Lamb is one of the meats that like by every Albanian family. We want to share with you this recipe for a delicious and different serving of the roast lamb, and at the same time, it is a nutritional dish for all the meat lovers.

Ingredients
- 1-lamb thighs about 2,5 kg
- Rosemary, salvia
- Salt, pepper, olive oil
For the Semolina
- A glass of semolina
- 2-glasses of lamb stock
- 1-small onion
- Salt, pepper, olive oil, fresh mint
- 1 tbsp of butter
Directions
- Preheat the oven at 200°C/400°F.
- First, we rinse the lamb meat and dry it with kitchen paper. We put the lamb leg in a roasting pan, making some cuts to it and marinate it with salt, pepper, herbs, and olive oil.
- Put the lamb in the oven to bake for about 2 hours and 30 minutes. The baking time depends on the lamb quantity that you have. It will need 50-60 minutes for 1 kg of meat. After the first 30 minutes, you can cover the lamb with aluminum paper, to keep the lamb soft. In half of the baking time, we will turn the lamb from the other side, and in the last 15 minutes of baking time, we will remove the aluminum paper. The roasted lamb will be golden brown. The lamb liquid that remains in the baking dish we will use to cook the semolina.
- In a deep pan, we add the chopped onion, olive oil, and cook it for a few minutes until it tender. Add the semolina to the pan and stir-fry it for 2 minutes. We add the hot lamb stock or water, salt, pepper, and cook all for about 15 minutes until it absorbs all the liquid. In the end, add fresh chopped mint.
We also can serve the roasted lamb with rice or oven potatoes. We recommend semolina as a healthy and easily digestible ingredient in our organism.
