This Quick No-Knead Bread recipe is a simple bread, which is ready in an hour to bake in the oven. The dough does not need to knead at all, and the preparation consists of three episodes of 20 minutes before baking the bread.
This bread is a soft one, prepared only with flour, water, and salt, without added fats and flavored with sesame and black seed (Nigella). In this recipe, the amount of liquid ingredients occupies 80% of the weight of the dry ingredients and reminds me of the Albanian çyrek recipe once prepared by our grandmothers, which had a similar dough consistency.
We in the family enjoyed it very much. I decided to share with you this recipe that prepares quickly and deliciously. You can cook it while you prepare your lunch to serve it warm on the table along with other dishes cooked for the family.
You can also try other types of bread recipes. I recommend Black Bread, Stuffed Panini, or Turkish Pite.
Ingredients
First dough
- 120 g of flour
- 10 g of dry yeast
- 200 ml of lukewarm water
For the bread dough
- 360 g of flour + other flour to roll it
- 200 ml of warm water
- 1 tsp of salt
For the sauce
- 1 egg yolk
- 40 g of flour
- 70 ml of water (2 tbsp of cold water + 50 ml of hot water)
Directions
First dough
- To cook this recipe, we first prepare the first dough for activating the yeast. We will prepare a thin dough.
- In a bowl, mix 200 ml of warm water with yeast. After the yeast dissolves, add the flour and mix it with a spoon until to make a thin dough. We will cover this mixture and leave it at a warm temperature for 20 minutes until it doubles in mass and the yeast is visibly activated. You will see that the dough creates bubbles.
Bread dough
- Passing that time, we will proceed with the preparation of the bread dough. In the same bowl, add the rest of the warm water, flour, and salt. Mix again with a spatula or spoon until the dough is combined and the flour is completely absorbed. The dough will turn out somewhat soggy and sticky, not too stiff.
- Cover it again and let it rest at a warm temperature for another 20 minutes. You will see that it significantly doubles the volume.
- Meanwhile, we will prepare a baking tan with baking paper, creating a division in the middle of it with the baking paper.
Rolling and Baking
- When the dough rises, after 20 minutes, sprinkle enough on the top where we will roll the dough with flour, throw the dough and again sprinkle with flour the dough by folding it with a spatula until the flour we sprinkle is absorbed and the dough takes a firmer mass to form.
- Divide the amount of dough into two equal parts. Round it and shape it with your hands like an oval shape.
- We place them in the prepared tan and cover it with a kitchen napkin to let it rises again for 20 minutes.
- In a small bowl, mix the flour, water, and egg yolk. Brush the bread surface with this creamy sauce.
- After it, we will shape them with our hands, refer to the photos, and sprinkle them with sesame seeds and black seeds (Nigella).
- Bake them in a preheated oven at 250 degrees for 15 minutes.
- Take them out of the oven, let them cool a bit, and we can consume them warm. The bread is soft and tasty.

Personally, it’s the first time that I hear about the Quick No-Knead, but your step-by-step process is very clear and straightforward.
