Perfect Grilled Zucchini

Ingredients

  • 3 green zucchini
  • A bunch of basil (15 leaves)
  • salt, pepper
  • 70 ml olive oil
  • 1 tbsp of ground Parmesan cheese
  • a handful of pistachios
  • 2 garlic cloves

Directions

  1. We will wash the zucchinis well, wipe them with a napkin, and cut them into thin slices.
  2. Marinate the zucchini slices with salt and olive oil and cook them in the grill for a few minutes on both sides.
  3. Arrange them on a flat, open plate.
  4. We prepare fresh basil pesto to season the grilled zucchini slices and taste them properly.
  5. In a mixer glass, add the washed and dried basil leaves from the water, olive oil, minced cheese, pistachios, garlic, a little salt, and pepper.

  1. We grow our own vegetables and every year we have a huge harvest of zucchini. I am always looking for new ideas as to what I can do with all our zucchini. I have taken the young ones and slice them in the length and then put them under the grill with cheese on top to melt. I have never tried it with a basil pesto sauce, so when I have lots of zucchini again, I will try your recipe.
