Okra is one of the most used vegetables during the Summer in our culinary tradition. It is rich in vitamins and low in fats and sugar, highly recommended for everyone, especially for diabetic patients. Imported by East, this vegetable grows in every part of Albania. It can cook in various ways, and we want to bring our Oven-Baked Okra Recipe.
Ingredients 4 Servings
- 500 g okra
- 1-onion
- 1-carrot
- 1-bell pepper
- 1-potato
- 2-ripe tomatoes
- Olive oil
- Salt, pepper, fresh parsley.
- 2 glasses of meat stock
Note: For a vegan recipe, you can replace the meat broth with water.
Directions
- Preheat the oven at 200 grade celcius/400 degrees Fahrenheit.
- Rinse and clean the okra from the tail, keeping the original shape.
- Transfer the cleaned okra to a pyrex baking dish, adding the bell pepper cut in pieces, diced carrot and potato. If you don’t like the potato, you can avoid it.
- Add salt and 3-4 tbsp olive oil and put in the preheated oven to bake for 25-30 minutes.
- In a saucepan, add olive oil and the finely chopped onion and stir-fry for 3-5 minutes until tender. Add the grated tomatoes and let cook together in medium heat until it creates a sauce.
- Season with salt, pepper, chopped fresh parsley, and add the sauce to the partially baked okra, cover with meat broth or water and bake for 40 minutes.
- You can use a baking dish with a lid or cover it with aluminium paper. In this way, the vegetables will remain soft and won’t dry. In the end, our baked okra will be soft and with a little broth.
- Serve this dish warm.
If you prefer to add the meat at the baking dish, you can do it. We use the meat stock and serve the meat separately, but you can cook together with the okra if you prefer.
