No-Bake Strawberry Dessert

This No-Bake Strawberry Dessert is a quick recipe, full of flavor and aroma, fresh for the spring and summer season.
This cake does not need to bake and can prepare quickly. We have to let it rest in the fridge for 2-3 hours after preparation, and it is ready to be consumed.

It is similar to the other unbaked desserts or cheesecakes. This time, I did not prepare the filling with cream cheese but with Diplomat cream.

Ingredients for a 24 cm cake ring

For the biscuit base

  • 250 g Pettit Beurre
  • 120 g of melted butter

Diplomat Cream

  • 500 ml  of milk
  • 4 egg yolks
  • 2 tbsp of starch
  • 4 tbsp of sugar
  • Lemon zest
  • 1 tsp vanilla extract
  • 10 g of gelatin sheets
  • 500 ml of sweet whipping cream
  • 500 g of fresh strawberries

Directions

Base Preparation

  1. We will prepare a cake shape with 24 cm diameter openings by coating the base and sides with baking paper.
  2. We will grind the biscuits in a kitchen shredder or place them inside a plastic bag and crush them with the kitchen roller.
  3. Toss the finely crushed biscuits in a bowl, and add the melted butter. We will mix them well to form a dough.
  4. We throw this biscuit dough in the cake ring. Distribute it above the base and compress it tightly. Put it in the fridge for 20-30 minutes until the base freezes. During this time, prepare the diplomat cream.

Diplomat Cream

  1. Diplomat cream is a mixture of custard cream with whipped cream, so first, we will prepare the cus. Place a bowl in the refrigerator to cool.
  2. We will put the milk in a saucepan together with the organic lemon zest to season and heat at the same time.
  3. In another bowl, we will mix the egg yolks with sugar and starch. Stir them with an egg wire until the mass liquefies and the sugar dissolves.
  4. Place the gelatin sheets in cold water to soften for a few minutes.
  5. Remove the milk from the heat, eliminate the lemon zest, and gradually start adding the warm milk to the egg mass by stirring well.
  6. Once the whole amount of milk mixes with the eggs, we will pass this mass again in the pot. Put it again at a low temperature, and stir it until it thickens and the custard cream is ready.No Bake Strawberry Dessert-Family Cooking Recipes
  7. We will throw the obtained cream in the bowl that we cooled in the refrigerator. Add the softened and dried gelatin from the water. Stir well to dissolve the gelatin and let the cream cool. We put a cellophane bag on it and put it in the fridge.
  8. Beat the whipping cream, which we placed in the refrigerator for at least 20-30 minutes before beating it. We will beat it with an electric egg beater until it takes a stable shape.No Bake Strawberry Dessert-Family Cooking Recipes
  9. Remove the custard cream from the fridge and add the beaten cream part by part.
  10. Mix them well with the electric beater to get a unique cream. Our Diplomat cream is ready to use.

Strawberry Cake

  1. We will wash the strawberries well and drain them from the excess water.
  2. We take out of the refrigerator the cake shape, and we will place the cut in half strawberries on the sides of the pan.
    Pour a part of the diplomat cream, spread it well, and place a layer of strawberries cut into small cubes. Add the cream again and add another layer of chopped strawberries. If you want, you can replace it with another fruit.No Bake Strawberry Dessert-Family Cooking Recipes
  3. Fill the cake with cream, level it well, and place it in the fridge to rest for 2-3 hours until the cream hardens and the cake retains its shape.
  4. Once the time passes, we remove it from the ring shape, place it on a serving plate and decorate it on the surface as desired with fresh cut strawberries.
  5. We cut the cake into slices and serve it.
