Mish Me Presh

Leek is one of the vegetables that widely cook in the winter season, and in the Albanian tradition, there are many ways to cook it. Today we will bring a recipe for cooking the dish with leeks, Mish Me Presh-Leeks with Pork, and Pistil. This recipe is tasty, and leek combines best with pork and Pistil sour flavor.

The Plum Pistil is a product made with plums, which after cooking are taken from their pulp and processed without added sugar, but only with their fructose. Plum pulp after removing some of the moisture through boiling, and we get a thick plum dough, we will open it in a flat casserole, or pan, and pass it in the process of drying in the sun or the oven at a low temperature until we obtain the well-dried pistil.

Ingredients for 4-6 Servings

  • 2-3 leeks
  • 400-500 g pork chop
  • 1-onion
  • 1 tbsp rice
  • 30-50 g of plum Pistil
  • 1 tsp powder red pepper
  • Black pepper, laurel, oregano, salt, olive oil

Directions

  1. We will cut the onion finely into cubes. In a non-stick pan, we will add the onion, the washed and dried pork, and with a little olive oil, we will sauté them until they soften in their liquid with the lid covered. Place the pistil to soften in warm water.
  2. We will add the leeks cut into small pieces, and cook them for a few minutes. When the leeks tender, add salt, pepper, bay leaf, and softened pistil along with its water. We will also add the washed rice and cover the whole mass with other water, 1-1.2 liters, depending on the pot you will use and for how many servings you want to serve the dish. We will also add red pepper powder, oregano, and a little olive oil and let it simmer on medium heat for about 1 hour so that the meat boils well. If you want to cook it faster, you can use a pressure cooker.

We will serve it warm for a lunch meal. For all those who like the taste of pistil or sour flavors, this is a tasty and healthy dish.
