Ingredients
- 250 g of flour 00
- 125 g of powder coconut
- 150 g of sugar
- 180 g of butter
- 1-egg
- a little salt, 1/2 lemon zest, a little vanilla extract
- 1 tsp baking powder
- 1 tbsp rum
- 100 g coconut powder for decor
Directions
- We will mix the softened butter with the egg for a few minutes with an electric egg beater.
- We will add flour, puff, and minced skin of organic lemon and vanilla.
- In a mixer or kitchen shredder, we will grind the coconut flour together with the sugar, and when we see that it grated finely, we add it to the previous dough.
- Mix the dough well, wrap it in a bag and leave it in the fridge for 2 hours.
- Passing the time, we separate the dough into pieces, by 15 grams each, and give a round shape with our palms.
We pass them in the coconut and put them in the pan lined with baking paper. Bake the biscuits at 180 degrees for 15-18 minutes, until they get a light golden color.
- Let them cool completely and serve as desired. Coconut biscuits need to eat fresh and not left for many days after they dry and crumble.
