Pumpkin is one of the food that we can use daily in our cooking recipes during the fall and winter, and it is also one of the tools to use for the Fall and Halloween decorations. Today, we want to share our Fresh Pumpkin Cake Recipe, which you can cook for Halloween, or a weekend dessert, or in daily. It is simple to prepare and delicious to taste.
As we are in Halloween week, we will share different Halloween salty or sweet cooking ideas, and for this reason, we decorated this pumpkin cake with a Halloween pumpkin image.
Ingredients for a cake baking ring 24-28 cm.
- 250 g fresh peeled pumpkin
- 280 g all-purpose flour
- 120 g ground nuts
- 100 ml of vegetal oil
- 80 ml of milk
- 230 g of sugar
- 4- eggs
- 1 package baking powder (16 g)
- One orange (zest)
- a little salt
- 2 tbsp rum
- 50-100 g dark chocolate grated, chips, or in small pieces (facultative)
- powder sugar for decor
Directions
- We preheat the oven at 170-180 degrees. (refer to your dessert baking program)
- In a kitchen blender or mixer, we add the cut pumpkin in pieces, milk, and oil, and we blend all until to make a creamy mixture.
- We separate the white of the eggs from the yolk ones. In a bowl, add the egg whites, a little salt, and 2 tbsp of sugar, and beat all with an electric hand beater, until to make a consistent foam.
- We add the yolk eggs in another bowl, add the rest of the sugar, the orange zest, and beat together until to make a white foam. Add the rum and mix again. Add the yolk mixture to the white one, and mix carefully bottom-up.
- We sift the flour and mix it well with the ground nuts and the baking powder. I used a blender to grate the nuts, and you can also use peeled almonds or hazelnuts.
- The next step is to mix the eggs and sugar mixture with the pumpkin mixture. We add the flour little by little, mixing carefully bottom-up. In the end, we will add the dark chocolate chips or pieces and mix it well.
- We prepare a baking cake ring, grease and flourish it, and add the cake dough to it. We transfer the cake baking pan to bake in the preheated oven for 35 minutes.
- Turn off the oven, let the cake cool for a while, and transfer it to a cake serving dish. If you like to decorate like a pumpkin, then draw your preferred pumpkin image on a piece of paper, cut it m, and place over the cake. Sprinkle the cake surface with power sugar and once you take off the paper, you will have your pumpkin image on it.
You can also prepare chocolate cream and decorate your cake surface as you like.
