Fergese me speca-Albanian Traditional Recipe

Fergese me Speca is a traditional summer Albanian recipe, a perfect and tasty combination of green bell peppers, tomatoes, and cottage cheese or fetta cheese.

To brief, Fërgesa has been cooked by our grandmothers, mainly in Central Albania, where we can find a variety of cooking Fërgesë me Melci, and one that is more loved and cooked in our country, it is this one.

Also, it is an Elbasani traditional recipe, that in her original version has been cooked with beef or lamb liver. This one is the recipe without the liver, and it is created from the poor families that can not find the beef liver every time. Despite this fact, this recipe is simple but very tasty.

Ingredients

  • 500 g green Peppers
  • 300 g cottage cheese or 200 g fetta cheese
  • 3-4 ripe big tomatoes
  • 3-4 garlic clove
  • 1 chilly pepper
  • Olive oil, salt, pepper
  • Eggs- one egg for each person you will serve it.

Directions

  1. First, preheat the oven to 200 degrees.
  2. Next, rinse the peppers, dry them and transfer them to a baking dish. Also, add a little salt and olive oil, and put them to bake in the preheated oven for about 20 minutes.
  3. After baked, cover the peppers with aluminum paper, or put them all in a plastic sachet, and let them cool completely. In this way, the peppers peel easily. In this way, we will cook healthier peppers. As well, you can fry the peppers, cut them into pieces, and stir fry for 7-8 minutes. The original recipe has been cooked with fried peppers.
  4. In a pan, add olive oil, the chopped garlic, and chilly pepper, and let the oil season with them in medium heat. Also, If you don’t like garlic, you can add the garlic in cloves, and remove it after season the oil. As well, If you don’t like chilly, don’t use it.
  5. Next, add the ground tomatoes, and cook for about 10 minutes until thick and creates a sauce.
  6. Then, add the peeled peppers, and after cooking them for a few minutes in tomatoes sauce. Next, add the cottage cheese of fetta cheese and cook the Fergese until too thick. In the end, add the eggs to the top of the Fergese, the same as you cook the sunnyside ones, and let it cook covered with a lid for 1-2 minutes until the egg coagulate.

Note: If prefer to explore new tastes, you also can cook this recipe in different ways. You can try adding finely chopped onion, together with the garlic at the frying oil, and following the same steps as above. This is the fergese recipe that belongs to the Tirana tradition.
