Pasta Dough

  1. As the first step, we will prepare the dough for Tagliollini pasta by mixing the flour and fresh eggs. We will act like for Tagliatelle pasta. Tagliolini are thin tagliatelle.
  2. Let the dough rest for 30 minutes, open it with the pasta machine and shape the pasta thinner than the Tagliatelle shape. I use the Nona Papera pasta machine. Pasta Sauce
