For Pasta
- 4 eggs
- 400 g of flour
- 1/2 tsp of salt
For the pasta sauce
- 250 g cleaned shrimps
- 3 zucchinis
- fresh parsley
- salt, pepper
- olive oil
- Minced Provola cheese

Tagliatelle Pasta Dough and Their Preparation
- First, we will prepare the dough for the tagliatelle by mixing the flour, salt, and eggs. At first, the dough will come out strong, but we have to knead it for a few minutes.
- So, wrap it in a bag and let the dough rest for 15-30 minutes.
- the time has passed, we will roll the dough with the pasta dough machine (I use the Nona Papera pasta machine). We will demonstrate this recipe with video as well.
- When the pasta layer is ready in the right thickness, we will cut the tagliatelle, sprinkle them with some flour, and our tagliatelle pasta can cook after it. This amount of dough is enough for six abundant servings.
- Thus, we leave the tagliatelle in a top or casserole sprinkled with flour, and when the sauce and water are ready, boil them for 2 minutes.
- Then, season them a few moments in the saucepan and serve it warm with minced cheese on top. We used Provola cheese. You can use the cheese you like or have it at home.
Pasta Sauce Cooking
- As a start, we will clean the shrimps from the head, shell, and intestinal fibers, and they are ready.
- Meanwhile, we add olive oil and a garlic clove to the saucepan and let it heat over medium heat.
- We will add the zucchinis cut into thin slices of 0.5 cm. We stir them for a few minutes in the pan until we see that they are starting to take on a light golden color.
- Remove some of them from the pan, and with a few olive oil and fresh parsley, blend them in a kitchen shredder.
- In the saucepan, where we have one part of sliced zucchini, add the cleaned shrimps, salt, and pepper.
- In a few minutes, the shrimps are ready, as they do not need so much time to cook. Also, add the zucchini cream that we obtained by grinding half of them.
- We will let the sauce taste all the ingredients together for a few minutes, and the sauce is ready.
- Meanwhile, boil the tagliatelle for 2-3 minutes in a large saucepan, boiling with salt.
- We will add the sauce to the pan, enjoy them with the sauce for two minutes and serve immediately.
