It is easy to prepare and a healthy choice for the first dish for a lunch or dinner meal.
It combines very well with many poultry dishes recipes for a healthy and dignified lunch with your friends and family. You can choose any winter squash that you have or prefer for this recipe. We have used the Golden Nugget, the yellow winter squash.

Ingredients
- 200 g yellow winter squash
- 1- potato
- 1-carrot
- One piece from the chicken breast (facultative)
- Fresh parsley
- salt
- A bread slice
- lemon
- 1 tsp ground fresh ginger
- olive oil
- pepper

Directions
- First, we clean, peel, and rinse the vegetables well in running water. We cut them in pieces, not too small, and put all in a pot and cover them with cold and salty water. We add a piece from the chicken breast and fresh parsley in the pot.
- We put it to boil in medium heat for 15-20 minutes.
- After that, we put the cooked vegetables in a blender or food processor and blend them with their liquid making a creamy soup. The soup must be creamy and not too thick.
- In the end, we season the soup with lemon juice, olive oil, salt, pepper, and ground fresh ginger.
We cut the bread slice in small pieces, and we pass it in a pan with a little olive oil, making them crispy. - Serve the soup hot with a little olive oil and the diced crispy bread pieces. For those that love spicy food can add chilly pepper in it.
