Ingredients
- 500 g of Paccheri pasta
- one cuttlefish or two squids
- 200 g of shrimps
- 400 g of black mussels
- 1 zucchini
- 1 brunch of cherry tomatoes
- fresh parsley or dill
- olive oil, black pepper, garlic, salt
Directions
- First, we will prepare the pasta sauce. So, in a pasta saucepan, add olive oil and two cloves of finely chopped garlic.
- Then, cut the cleaned cuttlefish into strips and add them to the pan. Also, add the cleaned shrimps. We cleaned them first from the shell and the intestinal fiber. If you will use large shrimps, leave it whole with the head as their juice gives a lot of flavor to the sauce.
- As soon as the shrimp have changed color, we add the thinly sliced zucchini.
To summarise, the whole cooking process is in series. So, as we cut or get the next ingredient ready, the ingredients in the pan will cook. - And so we continue adding the cherry tomatoes cut in half. Add a little salt and pepper and let them cook for a few minutes.
- Meanwhile, we set the water to boil the pasta. In boiling water, we will add enough salt and Paccheri pasta to cook.
- Also, we open the mussels in another pan covered with a lid over medium heat. Remind to clean the mussels first. So, pull the thread they hold and rub them well with a wire mesh so that the shell does not have dirt.
- Once the sauce cook, add the mussels. Some we remove from the shell, some others we leave full for visual effect. Also, add the mussels liquid, which we filtered well.
- Meanwhile, drain the Paccheri pasta, which we boil for 1-2 minutes less than the packaging time, and add to the sauce. We can also add a little water from cooking the pasta.
- Mix them well to get the taste of seafood. Add fresh herbs and a little olive oil, and serve the pasta warm.
Bon Appetit!
