Salads are the pleasure of our table and stomach, as through them we consume varieties of vegetables and fruits rich in vitamins, dietary fiber, and mineral salts. This Easy Mushroom Salad is a tasty combination of fresh mushrooms flavored in the pan, green salads, and other seasonal vegetables such as small tomatoes, radish, fennel, etc.
You can use the greens and salads you like or find by combining and enriching this salad in values and colors. It is a healthy first course or good meal for those who want to eat lighter.

Ingredients
- 3-4 mushrooms
- ½ mixed salads packet
- ½ green cabbage or spinach
- ½ cooked or steamed fennel
- ½ avocado
- 3-4 red radish
- 5-6 cherry tomatoes
- 1 small red onion
- 1 garlic clove
- fresh parsley
- salt, pepper, olive oil
For dressing
- 2 tbsp of lemon juice
- 1 tbsp balsamic vinegar
- 4-5 tbsp olive oil
- 1-crushed garlic clove
- salt
- ¼ tsp pepper, oregano, mustard.
Directions
- We will clean and rinse all the ingredients and dry them well.
- In a pan, we will put a little olive oil and a clove of garlic, and once the oil flavor, we will add the sliced mushrooms and cook for 3-4 minutes. Add a little salt, pepper, and fresh parsley and set aside.
- Meanwhile, we will cut the radishes into thin slices. We will also share the fennel previously cooked into medium pieces or slices. We will separate the avocado in half, remove the skin and cut it into slices. Chop the onion into cubes. We cut the small tomatoes in half.
- In a salad bowl, we will place the greens we have chosen washed and dried before. We do not chop them as they are small lettuce leaves. If you like, you can chop them by hand or with a silicone knife.
- We will put all the other ingredients in order, including the mushrooms.
- We will prepare the marinade by mixing all the ingredients in a jar or bowl with a lid and mixing them well until it makes a cream.
- Toss the salad dressing on top and make a light mixture so that it all marinates.
- We serve our salad immediately after we marinate it.
