This Easy Mascarpone Peach Cake recipe is a dessert that tastes great in the summer season when the peaches are fresh. Also, mascarpone gives us a yummy result and soft cake texture.
Furthermore, we use a few ingredients only, and the cake is ready for the oven in a few minutes.
Like the mascarpone and apple cake, this cake also tastes great for breakfast, picnic, afternoon, or after a meal accompanied by your favorite ice cream.
Ingredients- 22 cm cake mold
- 3 – eggs
- 140 g sugar
- 250 g Mascarpone cream cheese
- 1 lemon (juice and zest)
- 3 peaches
- 260 g flour
- 1 baking powder
- powder sugar for the top
Directions
- First, take out of the fridge the eggs and mascarpone 20-30 minutes before the start of the preparation to be at room temperature.
- Prepare the baking pan by lining it with parchment paper.
- Cut the washed peaches into thin slices and marinate them with a spoonful of sugar and lemon juice.
- Turn on the oven to heat up to 180 degrees and start the preparation.
- First, in a glass bowl, we will beat the eggs with the sugar with the help of an electric beater until the eggs double in volume and become a creamy mass.
- Next, add the lemon peel and the mascarpone cheese and mix again until we have a homogeneous mass.
- Meanwhile, the peaches have released their juice during the marination, which we add to the cream.
- Then, add the sifted flour mixed with the baking powder until we have a homogeneous dough.
- Pour the batter into the pan, place the peach slices on top, pressing them lightly into the batter, and let it bake for 40-45 minutes. We do the toothpick test.
- In the end, let it cool a little, remove it from the pan, transfer it to a plate and sprinkle it with powdered sugar.
- We serve the cake cut into slices.
