- 400 g of risotto rice
- 1/2 onion
- 1 zucchini
- 1 carrot
- 1 glass of white wine

- As a start, we will cook the juice for the risotto.
- So, in a pan, set aside to boil water with an onion, a carrot, a bunch of parsley, and some fish head, or shrimp if you have one. On the contrary, only vegetable juice is enough.
- We will boil them all for 20 minutes, and we have the liquid ready for use.
- Meanwhile, cut the lobster lengthwise and clean it on on its head part.
